Mash Water: 6 gallons @ 162 F.
Sparge Water: 5 gallons @ 170 F.

Sparge with 1 LB Masa Harina (lime corn flour) on top of grain bed.


1 TBS. Cumin, 1.25 OZ Chile Piquin Powder, 1 LB of pork belly @ Flameout.

Freeze wort and skim pork fat off of the top the next morning. Boil for a few minutes and re-chill.
