Notes

Brewed on 01/24/15.known as CA1
Used same evaporation rate of 42% as previous chocolate milk stout 1gal batches. With the current burner outside it took 75 minutes to hit 2.5 gal.

Bottled on 02/13/15: 228 Ounces out of 320.
Need to brew an additional 92oz. Need to brew an additional 1/4 gallon for a closer yield to 2Gal out of a 2.5 gallon batch.

Tasted on 02/18/15: Carbonation seems to be developing although it has only been less than a weak. I am afraid that I overcarbed the beer. I expected a 2.2 gallon batch and ended up with 1.75 so I probably added too much sugar.
*Initial taste was very sweet and very citric... pineapple like taste.

Tasted on 02/28/15: Carbonation seems to be increasing nicely. The beer tasted much less sharp and it's clearing up nicely.
However, there is a small yeasty-bite to the beer that could either be that it's still young, or the corn grainy flavor is coming through.

For the next recipe I will lower the corn by .5lbs and add some pilsner or honey malt.

Tasted again on 03/07/15: yeast bite is mostly gone and it's much more crisp and mellow. Definitely a good session drinker.
Next time cut back on the corn and add some pilsner malt.
