Non-Alcoholic Process Change
Mash in higher from 67C to 69C. To create more non-fermentable sugars that we hope will remain after alcohol removal.
Reduce hop IBU in the boil and move it to whirlpool and Dry hop.
Fermentation
Start at 21C and let rise to 23C. Hold for 3 days.
Transfer to Secondary. Cool to 10C and dry hop for 10 days.
