前回アシッドレストが48度を超えてしまい、プロテアーゼが不意に働いてしまった?結果ビールはよりドライになり、アミノ酸、つまり酵母のえさが増え発酵がより活発になり早く終わったと考えられる?
つまり今回はアシッドレストの温度に注意、というか麦下し温度を45度くらいにしてみるか
