Notes
Shooting for 6.5% and 40 IBU's
Sierra Nevada's No Place Like Oz is a limited-release American IPA, and the brewery has not released the official recipe for homebrewers. However, key ingredients and flavor profiles have been shared by Sierra Nevada, allowing for an informed clone recipe.
The beer is brewed with Australian-origin hops and features prominent notes of citrus and spice.
Key ingredients and characteristics
Malts: Two-row pale malt and Golden Promise wheat.
Hops: Australian varieties are the focus, including Galaxy, Comet, Ella, and Eclipse.
ABV: 6.5%.
IBU: 40.
Flavor profile: Notes of citrus and spice from the Australian hops.
Clone recipe: "No Place Like Oz" Australian IPA (5 gallons)
Fermentables
Two-row pale malt: 10 lbs.
Golden Promise wheat: 1.5 lbs.
Hops
Galaxy: 1 oz. (60 min boil)
Galaxy: 1 oz. (10 min boil)
Galaxy: 1 oz. (dry hop after fermentation slows)
Ella: 1 oz. (10 min boil)
Eclipse: 1 oz. (dry hop after fermentation slows)
Comet: 1 oz. (dry hop after fermentation slows)
Yeast
White Labs WLP001 (California Ale) or Safale US-05: These are common "clean" fermenting yeasts similar to what Sierra Nevada uses in many of its beers, which will allow the Australian hops to shine.
Specifications
Original Gravity (OG): ~1.062
Final Gravity (FG): ~1.012
ABV: ~6.5%
IBU: ~40
Instructions
Mash: Heat 4.5 gallons of water to 166°F, then add crushed grains. Target a mash temperature of 152°F and hold for 60 minutes.
Sparge: Once the mash is complete, raise the temperature to 170°F for a mash-out. Sparge with 4 gallons of 170°F water to collect the wort.
Boil: Bring the wort to a boil and follow the hopping schedule. The total boil time should be 60 minutes.
60 minutes: Add 1 oz. of Galaxy.
10 minutes: Add 1 oz. of Galaxy and 1 oz. of Ella.
Cooling: After the 60-minute boil, cool the wort rapidly to 68°F.
Fermentation: Pitch the yeast and ferment at 68°F.
Dry Hopping: When fermentation begins to slow (around day 5), add the remaining Galaxy, Eclipse, and Comet hops for a dry hop.
Packaging: After fermentation is complete (typically 7–10 days), bottle or keg the beer and allow it to carbonate.
