Notes

Calibrate the pH meter at 4 pH
Mash grains at 150 F. Add lactic acid to achieve ~4.5 pH.
Mash for 60 minutes & raise temp to 170 for 15 minutes
Boil for 10-15 minutes to kill any bacteria
Chill the wort to 80 F
Add 1 container of Goodbelly probiotcs
Seal the kettle and leave at 80 F for 24-48 hours
Check the pH - when it drops to 3.5 pH boil the wort for 20 minutes. This may take 2-3 days
Add hops at 10 minutes using hop basket
add the toasted coconut & the lime zest
Whirlpool for 10-15 minutes
Ferment for 48 hours @68-70 F , cold crash & add gelatin
