Primary 5 days 18 degrees c.
primary 3 days 19 degrees c.
Secondary 3 days days 19 degrees c.
Temp raise 24 hours 21 degrees c.
Drop temp for 48 hours as close to 0 degrees as possible and purge off yeast.
Transfer beer off of yeast and raise to 15 degrees c, add 52 gs of dry hop pellets and purge off fermentation vessel with c02 gun.
Allow hops to sit for 4 days at 15 degrees and then drop again to as close to as 0 degrees c for 24 hours.
Transfer the beer off the dry hops to clean fermentation vessel, purge off with c02 and hold for 5 days as close to 0 degrees as possible.
Transfer into mini 10 litre keg, purge off gently using the blow off valve and begin carb upto 10 psi.
Once happy with carbonation, purge off 3 x 500ml bottles and transfer beer and cap quickly to avoid chances of oxidization.
