Won 1st place in club-only homebrew club Lager competition out of 8 entries.



1 vial of yeast used to make 1L starter, split between (2) 5-gallon carboys.

2 hour mash was necessary on my system to extract all possible sugars out of corn and rice. Gravity after 1 hour was ~1.040, and after 2 hours was ~1.060.

Hold fermentation at 52F for first 4-5 days.
Before krausen settles, begin raising temp to 60-65F for Diacetyl rest.
After 3 weeks, rack to secondary.
Chill secondary to 38F over the period of several days, hold at this temp for 4+ weeks.
