honey has 16g sugar in 20 g. Used equivalent sugar amount for 282 g honey to get 1/3 of bill in honey.

co-pitched 1 pack expired mothership brett blend with 2 packs expired french saison

also added 1/4 tsp DAP and <1/4 tsp yeast energizer

added honey in fermentor once cooled

OG is 1.052 (aug 14?) at temp 84F (1.054 at RT - topped off to more than 1 gal that is the discrepancy btw calc'd OG probably). Ferment open first day or two.

SG is 1.004 Aug 19 9day
SG is 0.999 Aug 30 - probably done
