Brewed on 4/10/2021 via BIAB Method.

8 gallons of strike water @ 153 degrees F yield mash temp of 149 degrees F for 45 minutes. After 45 minutes, the the cereal mashed corn was added to the mash for 15 minutes. Corn was harvested from UC Davis Cambell Track in fall of 2020.

End of mash pH = 5.43 (not calibrated). Computer says a pH of 5.36. Differences may be due to error in 11 mL of lactic acid, not calibrated pH probe, or just error of probe, or a number of other factors. Pretty good in my book.

7.75 gallons starting volume @ 8.1 brix = 1.032 g/L
OG = 11.2 brix = 1.045 g/L

FG = 1.006 g/L via hydrometer.
