Notes

Used Belgian 3787 + German Ale 1007 (wyeast) slurry. Pressure fermented at room temperature, pitched at about 64.

UPDATE 4/2/2021: I brewed this again with 1 lb fewer pilsner malt grain, but better efficiency. Single infusion no sparge with herms recirculation for 7 hours at 150f, 1 hour mashout at 170F, 90 minute boil instead of 60 last time. 17g Mittelfruh at flameout instead of 28g at 10 minutes. Whirlpool chilled with plate chiller set up in inline format. Crazy high efficiency for a no sparge! This time I pitched one fresh packet of 3787, no starter. If there's no pressure in36 hours, I'll throw in some 1388 slurry. I plan to ferment this one at or as close to 15psi as I can. I want the pressure to suppress those esters. and have this beer mimic a 1007-fermented kolsch.

I know I'm breaking all the rules, but the last one I did with the 1007/3787 pitch at 7psi was one of the best beers I've ever made.
