Notes

During mash prepare the citrus peel


Blanche 1 orange or grapefruit peel and half a lemon's peel:

  • Add peel to a pot of cold water
  • Heat water to boil
  • As soon as the boil starts remove from heat and strain peels
  • Repeat this process 3 times

    Make a simple syrup with 70g of sugar and 70g of water, add the peels and simmer for 45 minutes

    place the peels somewhere to dry for 24h

    70g sugar in 70g water and simmer for 45 minutes

    dehydrate/ bake until hard/ 24h

    Add remaining syrup and Juice to wort post-boil
