Diluted 3.8 gallons with Poland Spring water and ended at 4.5 gallons. Took about 0.2 gallons or so for a starter for crooked stave dregs only. Don't have an airlock for that starter so covered in just foil. Pitched smack pack of Wyeast 3763 Roeselare blend at 72F
1 ounce of oak cubes boiled and added to fermenter (0.5 ounce of medium toast american and 0.5 ounce of medium plus toast french) |

racked this batch to a separate 3 gallon fermenter. left behind the yeast cake and fermented a new batch on top (see brew log for Flanders Red II, brewed march 9, 2020.)
Tasted the hydrometer sample and got the brett funk kind of but no acidity here at all. |

Bottled as a blend with the 2020 version of this same recipe. Forgot to re-yeast
Blue caps: 25% 2019 Flanders red and 75% 2020 Flanders red
Black caps with NB red arrow: 50% 2019 Flanders red and 50% 2020 Flanders red
Tasting note: both of thee were amazing. the 75/25 Split one is definitely more sour |
