Notes
  1. Add DME and water agents to 7 gals water in brew kettle, stir to dissolve.
  2. Heat to 155-160 degrees.
  3. Steep honey & pilsner malts and raw, chopped Russet potatoes for 30 minutes at 155-160 degrees, then remove from the brew kettle.
  4. Bring wort to boil, add 1 oz CTZ hops.
  5. After 30 minutes boil, add maltodextrin and lactose.
  6. After 50 minutes boil, add yeast nutrients.
  7. After 52 minutes boil, add 1 oz Idaho #7 hops, 1 oz Idaho Gem, and 1 oz Cashmere hops.
  8. After 55 minutes boil, add Whirlfloc tablet.
  9. After 60 minutes of boil, turn off heat, top-up wort to 6.5-7 gals with distilled water, whirlpool, and let rest for 15 minutes.
  10. Add 1 oz Idaho #7 hops and 1 oz Idaho Gem for hops for 15 minutes of hop stands part of resting period.
  11. When fully cooled, transfer to fermentor, aerate, then pitch yeast.
  12. After 8-10 days in fermentor, transfer to Corney keg or secondary fermentor, add corn sugar, 2 oz Idaho Gem, and 2 oz Idaho #7 hops. Dry hop for 5 days.

    As a 4th generation Idahoan who lives in the middle of the where the bulk of Idaho hops, barley, and potatoes are grown, I just had to brew an IPA featuring these Idaho products.
