Notes: The recipe uses reverse osmosis water. Adjust all brewing water to a pH of 5.5 using phosphoric acid. Add 0.5 tsp. calcium chloride and 0.5 tsp. calcium sulfate to the mash.
Mash in at 147 *F and rest for 60 min. Raise to 168* for 15 min, recirculating the wort. Fly spare with 170* water collecting 6.5 gallons of wort.
Boil the wort for 90 Min adding hops at the time indicated in recipe. First wort hops are added to boil kettle before sparging. Whirlpool hops are added after boil and 15 min have past. Stir the hops in and rest an additional 15 min.
Chill the wort to 65*F, pitch the yeast and ferment until complete.
Rack the beer if desired and dry hops for 3 days.
