A unique beer from the eastern part od the Netherlands, preserved by Melchior Mels in his notebook and adapted by Rudolf Nunes Ferro (1994). It can only be kept for a short period of time (unless you pasteurize it) once the sweet-sour combination has started foaming. A good beer to try for as festival or an event.
First wort: Mash the barley malt. From this, collect 3.6 gallons of wort with a gravity of 1.059. Keep 2.3 wt of the wort apart. Boilk the rest for one hour with the hops.
Second wort: From the same mash, collect another 2.1 gallons of wort with a gravity of 1.020. Combined hopped wort with the unhopped second wort to get 5.1 gallons of wort with a gravity of 1.043. Leave this to sour for ten hours and then add top-fermenting yeast. This will ferment to a sour white beer of approx 4.3 ABV.
Boil the 2.3 qts of reserved wort from the first mash to get a syrup-like substance of 0.7 liters and an OG of 1.189. (In the original recipe this takes 3 days).
Add the syrupy wort to the sour white beer. Wait for fermentation to restart. The result is a foaming sweet-sour white beer. This is the moment to drink it! Do not bottle - it is still fermenting. After about 10 days, all the sugar from the wort syrup will have fermented, leaving a sour, flat beer. |

Notes: Let mash rest 45 min to ensure full conversion at low mash temp, stirring the mash at least every 10 min, then start re-circ for 20 min or until wort is clear, then start lauter. Ideally temp gets over 160F, but not required, only that wort is clear.
Collect 80 gallons in the boil kettle (will top off with room temp RO before adding whirlpool hops)
Add first wort hops and 1 tbsp fermcap as kettle is filling
For batch 1, continue to lauter as much volume as possible in the HLT and use that for strike in on batch 2.
Note 75 min Boil time for DMS reduction with significant Pilsner malt.
boil and whirlpool hop quantities are per 3 bbl batch, dry hop quantities are for combined 6 bbl batch
18 g whirlfloc G 15 min before end of boil
15 g yeastx-82 min before end of boil
At end of boil, add ~30 gal of room temp RO to bring total volume close to 105 gal and temp to 170 F.
Then whirlpool hops and whirlpool for 10 min. Then add 50 ml lactic acid to try to hit pH of 5.0 and let rest 15 min to settle trub. Then knockout through HX to FV.
Get batch 1 as cold as possible, down to 35 F if possible. Add 25 g ALDC directly to FV after batch 1 knock-out.
Knock out batch 2 to target 50 F for start of fermentation - adjust flow as needed. Set controller for 53 F.
Add 02 through carb stone at 1 L/min for 45 min

Notes: Cold Fermentation: After 12-36 hours this
mixture will begin to churn and produce CO2. Once you see signs of fermentation, slowly cool temperature of the wort to
50° - 55°F (about 1° per hour). After 10 days since the wort
started fermenting, the mixture will calm down and the excess proteins will settle at the bottom of the primary fermenter. At
this time, raise the temperature to 60° - 70°F for 2 days to improve flavor. Check the specific gravity to make sure it is within 3-4 points of the FG and then carefully move the fermenter full of beer to a counter top. Be careful not to disturb the sediment. You can move the primary fermenter several hours before you intend to transfer, so the sediment has a chance to resettle to
the bottom of the primary fermenter. Carefully siphon the beer into the sanitized secondary fermenter. Move the airlock
from the primary fermenter to the secondary fermenter. Make sure the airlock has enough water. Slowly cool the beer (over
2 days) down to about 40°F for 3-4 weeks. If the beer has not cleared, you can add Claro K.C. finings for beer.
