Q3 2021 Brewersfriend Community Recipie.

Finished at 1.006, from 1.034. About 3.7%.
The color is very pale - maybe 3-4 SRM - the aroma has a sweet smokiness to it, and the taste has that smoke, but also finishes nice and clean. Can’t wait for this to get all dressed up.

6 bottles, the rest went into the keg.

Note that wb06 is a diastaticus yeast, which ferments much further than other yeasts. Bottle bombs are possible. And then all your equipment needs to be cleaned with Iodophor, or you risk contamination.

Just do some research on that kind of yeast before you introduce it to your brewery.

I didn't even notice. Though my brewery has a whole lot of brett and diastaticus so it's a way of life for me now.

I don't see bottle bombs as more likely with diastaticus. If you wait for terminal, like with any other yeast, you won't have any problems. It's just that terminal is a bit lower than other strains.

Edit: I could see bottle bombs as more of a risk if you're a commercial brewery with packaging lines, but that's from cross contamination. You certainly hear about cross contamination from packaging machinery from time to time.

Went by the LHBS to chat with the guys about dry yeast for the extra Gradiski. We concluded Llemand Belle Saison. A smoky Wheat Saison. Only1-1/2 gal but will be interesting.
 
A Grodziskie Saison! The final frontier, boldly going where no brewer has gone before. :)

I would love to hear how this turns out.
 
According to my Tilt (which is notoriously inaccurate on FG) my Piwo has fermented to 0.997. My sincere hope is that it is really more like 1.007, we will find out when I return home and cold crash it.

Five more days and I'll have someone turn down the inkbird and cold crash it.

I’m a huge fan. This is such an easy drinking beer with a nice touch of smoke. Goes down like water. Perfect for the summer or anytime you want to session away. Might not be a better cookout beer ever. (Considering the total tonnage of wheat, I’m not sure how much this will clear, but I only used half a whirlfloc in the boil for clarity. I also used WLP029 so you all might get something clearer with K97.)

I need to brew one more time to empty my stock then placing an order to get this one rolling. I’d say it’s a perfect campfire beer

Looks great and a hell of alot clearer than my hazy one. My experience with k97 it takes ages to drop clear so I'm not expecting mine to clear up that much more.
 
Nice. I'm curious to hear how it turns out. I could order it online but I have 15kg of wheat sitting there and I should use it.
 
if your allergic to wheat like I am I have a recipe for pilsner instead
