Notes

Black malt goes in sparge only to avoid extracting bitterness!

Ferment in primary using kombucha starter (0.75L for 4.75L beer) for 3-4 days at 28C. Taste test daily for acidification/sourness; add US-05 when at preference and ferment until completion (4-5 days). Transfer to secondary and dry-hop with 15g Spalt and 25g Lemondrop for 3 days.
