kettle sour - yakult, chobani, Jalna, Farmers Union, 1 litre starter 24 hours.
Added 15 ml lactic acid.
42C for 36 hours.
OG 9 brix =1.035. Fermented down to 5 brix=1.011.
Added 3 kg mango flesh (kensington pride tray, 18 mangoes) after 2 weeks (Sunday 11 nov).
Thursday 15/11 am 5 brix = 1.011.
Monday 19/11 racked 21 litres into 2ndary.
