Notes

Split batch between S-23 and 34/70. S-23 is a total fruit bomb with some pretty terrible off flavors, cloyingly sweet even though it fermented to 1.010, until it's under gas then still sweet but offset nicely by the carbonic acid (CO2). At kegging 34/70 is smooth and crisp, with little to no detectable off flavors. Fermented to 1.013-1.014 with a wonderful light body. Waiting 24-48 hours from today 8 Sep 18, for carbonation to take hold of the beer.

Used filtered SE GA "City" Water from Midway, GA.
