mash in at 129 degrees to get a 125 step then take out about 1.5 gal of the wort and boil it for 20 min put it back in and bring the mash up to 152 now let it rest for 30 min then take another .5 gal out and boil it for 10 min put it back into the mash bring up the mash to 168 then pull the basket.
Add 4 oz peach puree to the secondary fermenter. with the pulp of two peaches for aroma.
let finish for 6 days or so then rack in a keg or bottles
