Notes

Alpha Wort Share held at Alpha Brewing Company in St Louis on 1/23/26. Original 5 gal wort share was 50% Proximity Pilsner malt, 40% White Wheat, and 10% Flaked Wheat. After bringing home, I boiled the 2.5 oz NZ Hops Nectaron aroma pellet hops in a 10.40 wort for 15 minutes. At flameout, I added 1 oz more of Nectaron pellet hops and 1 oz of Hopsteiner Azoro pellet hops, plus 1.0 lb of Nate's Raw & Unfiltered Honey. Pitched a packet of White Labs 1066 London Fog Ale Yeast for hazy IPA's. Fermentation was slow to kick off (almost 48 hours after pitching). FG was 1.008.
