Notes
A modification of "Cyser The Flying Squirrel" from Nobel Savage
Primary:
- Make starter with Go-Ferm
- Mix Honey, Apple, and pear juice
- Top up to 3 gallons with water
- Hand mix Fermaid-O & yeast nutrient
- Add yeast starter
Secondary:
- Transfer
- Added tannin, acid blend, and Sparkelloid
- Let sit for 2 weeks
- Backsweeten to 1.020
Brewer's Notes:
This was very cloudy, used Sparkelloid to fine. Next time I will try Pectic enzyme in primary. Even after fining still had a astringent flavor, and couldn't tase the pear. Next batch will add more pear, less apple. Took 2 months bottle conditioning before the flavors balanced and could taste some pear, still slightly bitter.
