Notes

A modification of "Cyser The Flying Squirrel" from Nobel Savage

Primary:

  • Make starter with Go-Ferm
  • Mix Honey, Apple, and pear juice
  • Top up to 3 gallons with water
  • Hand mix Fermaid-O & yeast nutrient
  • Add yeast starter

    Secondary:
  • Transfer
  • Added tannin, acid blend, and Sparkelloid
  • Let sit for 2 weeks
  • Backsweeten to 1.020

    Brewer's Notes:
    This was very cloudy, used Sparkelloid to fine. Next time I will try Pectic enzyme in primary. Even after fining still had a astringent flavor, and couldn't tase the pear. Next batch will add more pear, less apple. Took 2 months bottle conditioning before the flavors balanced and could taste some pear, still slightly bitter.
