10/23/2026: Looking to make this beer tight to style. This will be a very small beer. Think about going to Maris Otter as the base to get the graham cracker flavor - and reduce the grain overhead. Hops, think about some other british hops. Balance bitter with the sweet, but balance toward malt. Maybe even a lager yeast... like the altbier.
