Notes
Steep grains – Heat 2.5 gallons water to 155°F, steep grains in bag for 20–25 min. Remove, let drain.
Boil – Bring to a boil, add 1 lb DME.
30 min: add 0.5 oz Hallertau.
Last 15 min: add 6 lbs Wheat LME.
Chill – Cool wort to 68–70°F.
Primary Fermentation – Pitch Philly Sour yeast (or kettle sour first if using lacto). Ferment 10–14 days at ~68°F.
Fruit Addition – Rack to secondary onto puréed strawberries (3–4 lbs) + lime zest/juice. Ferment another 7–10 days.
Package – Prime with 5 oz corn sugar for 2.7–3.0 vols CO₂ (bright carbonation). Condition 2–3 weeks.
Tasting Notes
Aroma: Bright strawberry and citrus zest, subtle tartness.
Flavor: Strawberry-forward with crisp lime finish; tart but refreshing, lightly sweet if lactose used.
Mouthfeel: Light, spritzy, effervescent—summery and playful.
