Notes

Birch sap (eau de bouleau) was tapped from trees and used to brew this beer. The yeast used is not clean Champagne yeast but instead the reused lees from a honeywine brew which was fermented using the wild yeasts in the honey and added champagne yeast. The hops used were wild picked and stored in the freezer (-19C).
