Notes
  1. Prepare yeast one day ahead. Target Brew Water 4.8 PH
  2. Prepare Strike water and Sparge Water.
  3. Hold mash tun @ 154 degree for 60 mins. Drain mash tun to boil kettle. Rinse grains with sparge water and drain to boil kettle.
  4. Bring to boil for 60 mins.
  5. 30 mins to end of boil add 2 oz Citra hops.
  6. 10 mins to end of boil add 1 oz Amarillo hops.
  7. Cool to 180 degree. Add 2 oz, Citra hops. Let it stand for 10 mins.
  8. Cool to 68 degree. Drain to fermenter, pitch yeast.
  9. After 5 days transfer to secondary. Add dry hops 4 oz. Citra and 1 oz. Amarillo.
  10. After 5 days in secondary transfer to bottling bucket. Add priming sugar. Bottle or Keg.
