- Ajustar el PH del Agua para obtener mayor rendimiento en la
maceración. si es alta bajar con acido cítrico, si es Bajo con
bicarbonato de sodio, mantener cuidado con las cantidades.
- En el Fly sparge, mantener un flujo de agua continuo a una altura
de 2 centímetros hasta agotar el agua del lavado.
- Iniciar la fermentación a 18 C°, e ir incrementando 1 grado por
día, para obtener los esteres deseados en este estilo.
