Notes

Boil only 1 gallon with the hops. Add boiling water to keep 1 gallon. Strain the hops out, and add the 1 gallon back into the rest of the wort, raise the wort temperature to 165F, and add to fermenter (cool if possible). Top up with boiled water. Pitch below 85F.

I found this really excellent. One of my favourite beers ever, I could keep this in stock indefinitely (and I will!).
Really important to clear with gelatin, and then lager for at least a month (I did mine at about 16 degrees C). It clears beautifully to a crystal red-brown, but aging makes all the difference to this one. I'm 3 months in, and I would say ideal aging is 2 months. After that, it doesn't change enough to justify the wait.
I found that 340mL bottles worked the best.
Ideal serving temperature is about 5C. As it warms up, it tastes really great. When it's too cold, it doesn't release the carbonation and free up the flavours.
This one pours with about 1-2cm light brown head in an oversized glass, and the head grows to about 5-6cm before receding. This seems to be the pouring recipe which yields the tastiest drink.
This was brewed as a winter beer, and it is absolutely perfect for that. I'm not sure I would enjoy it as much on a hot summer's day.
