Chilled to ~65F. Pulled 1L of wort and added to a decanter starter. Shook starter to aerate. Left overnight to wake up the yeast & let the wort settle. Wort sample smells ridiculously good. Will filter, aerate, and pitch in the morning. |

Filtered to 200 um, aerated with the Persian Shake, and pitched 1L wake-up starter (very active, smelled amazing). |

Placed on 45 psi for 12 hrs. Slightly over-carbonated, but manageable. Tastes awesome, better than v1. |
