The WLP940 didn’t make a great first impression. It showed up late, the ice pack was warm, and after 48 hours in the starter there was no visible activity. On top of that, I used unboiled tap water, which likely didn’t help yeast health at all. Despite that, I pitched it anyway and it turned out the yeast was tougher than it looked. Pre-boil gravity came in at 1.060 with 8.5 gallons, and after the boil I ended up at 1.099 with 5.5 gallons much bigger than a traditional Mexican lager, but that’s how it landed. I fermented in a keg at about 73°F under 12 PSI. At day two, gravity had dropped to 1.033. The taste was rough slightly sour, and it still had that strong Fermaid smell that I’m not a fan of. It didn’t seem promising at that point. By day three, gravity was still 1.033, but everything else had improved significantly. The harshness backed off, the aroma cleaned up a lot, and it started to resemble something drinkable. Right now, the plan is to give it another 5–10 days to finish and clean up before cold crashing. It wasn’t a perfect start between the warm yeast and the starter mistakes—but it looks like it’s going to pull through just fine. Also I did not check gravity before adding my grains but check pre and post boil 5.2. |

Went a little longer on the boil to get down to 5.5 gallons. ~110 min |

Start with OG ~7 points to high and ended the same. Taste is way better than I thought for my first brew. |
