For those curious about "skimming the hot break",

I tried this on my recent Hefeweitzen, taking about 10 spoonfuls of foam with grey stuff in it. It did dramatically reduce the boil-over tendency for sure. Can't say it affected the head just yet, but likely not.

I've heard it also helps with clarity. I think the jury's still out on that one

IPA of the 3 C’s is rolling along. Based on a greater than expected pre-boil volume, I am extending the boil time by 15 minutes (75 instead of 60). This will be a pretty big beer, I think.
