Gday Brewers.

Thanks to the inspiration and proposal from @Bulin's Milker Bucket Brews
I am proposing that the Q2 brew for this year be in support of the Ukrainian Conflict.

This is a community brew so its up to you - this is out of the normal Brewersfriend Quarterly brew format.
We can get Matilda to draw another brewers name from the tin Or brew a selection of beer recipes put forward by
Pravda brewery.

This is an exceptional time and I rekon a way for us to do what we love and brew for support for our Brothers and Sisters fighting for their Sovereignty in Ukrain:).

Whadya think Lady's and Gentlemen raise our mash paddles in support of Ukrain or continue on as per usual?

If so We'll just continue on in this thread.
@Bulin's Milker Bucket Brews will link some recipes he's converted.

There are 5 recipes in a Google doc, for pro brewers. I have scaled them to 5 gallon, matched up SG, ABV, and IBU as close as I can get it. Should get you pretty close.

Yes, it’s all in metric. Sorry Americans, you’ll have to convert. Hops can definitely be substituted, same with malts. As for yeast, plenty of liquid subs out there, but hey I love dry yeast. Typically mashed with 2.5 liters of water per kilo of grain.


For those who want to get more technical, the water in Lviv, Ukraine is extremely high in bicarbonates. Below you’ll find the city water profile. Lviv pulls from different sources, so the levels differ slightly every month, but was able to calculate an average. Great for dark beer, not so much for light:

I recommend using phosphoric acid for dropping pH if you’re planning on using this water profile, but lactic acid will do the job as well (you’ll just need more).

I'll have to see what recipe best suits my stock.
Just got most together for the red ale (Q1 2022 challenge). Depending on the weather, I may still have to stick with kveik Voss

"We are the only brewery in Ukraine that uses a refermentation process during bottling. When ready beer is bottled, the brewer’s add sugar and yeast, causing a secondary fermentation in the bottle, saturating the beer with carbon dioxide, carbonating it.

The shelf life of bottled «Pravda» beer is 6 months to a year, longer than any other Ukrainian manufactured beer, even though it is non-filtered and non-pasteurized."

I saw that and thought that it pretty much sounds like the process most bottle-conditioning homebrewers use. Time frames match what I do as well.
