This is one of our house favorites. Preferred yeast is now wlp300. I pitch a 1.5l starter at about 60f and keep it cool for the 1st few days (64-65). Let it rise towards the end of fermentation to wherever it goes. Sometimes just a bit over 70. As soon as krausen falls, I keg. I get a great balance of clove and banana. Nothing overwhelms on either.
