The water chemistry is not published, and I have not yet sent a sample out for testing. Winnipeg is upstream from us, we are on the far side of Lake Winnipeg, so I am using it as a guess for now.

Notes

This is the second brew with the new equipment, and I am running a Kit from Grain to Glass in Winnipeg. This time I am using the wart chiller just to try it out. Normally I would no-chill for environmental concerns. But water is plentiful here on an Island in the Nelson River system. The Yeast is tame and very neutral, I would consider swapping it out for WB-06 or Wyeast 1010 for more wheat character, and if this was not a kit I would add actual blanched fruit pure in a cheese cloth bag in the fermentor after the yeast passes high krausen. (I don't care for sour beer, so I would be tempted to add a little blueberry compote, even though that would add some additional sugars)
