Cerveza rustica de granja francesa, seca y refrescante. Predominan fenoles y esteres fermentando a altas temperaturas y estresando levadura con cambios diarios de temperatura. Inoculación a 25 grados y fermentación a 27, desees de 48 horas soltar a temperatura ambiente para dejar secar la cerveza.

Inoculación por debajo de lo normal para producir mas esteres, basándoselas en un 30% menos de la levadura necesitada.
