Double Decoction: Infuse to 132F, hold 15 min.
Infuse to 145F, hold 30 min.
Pull first 1/3 decoction, Heat to 160F, hold 15 min, raise to boil, boil 10 min. Return decoction to mash to get 158F. Rest 15 min, pull 1/3 decoction, Raise to boil, return to mash to get 165F. Recirculate, collect wort with first wort hops.
Bring to boil, add bittering hops, boil 60 min, 1 whirlfloc at 50 min, add aroma hops at 60 minutes. Whirlpool 15 min. Get 10.5 gallons in fermenters.
Step up one yeast packet with 1 qt starter wort.
