trying to make cider again! got 1 gallon cider from chiles peach orchard this afternoon. plan is to :

  • SCRATCH heat 1/2 gallon to medium heat (??? temp)
  • SCRATCH -----add 0.2 lb brown sugar----
  • add 1tsp pumpkin pie spice
  • 1 tsp yeast nutrient
  • ferment with half pack of us05
  • keg and carb and put on draft

leaning toward leaving out the sugar. seeing online the cider unfermented might be in the 1050s and may ferment down to 1000 making it 6% out the gate so more than likely sugar is not going to be needed in the base!!!

some abandoned ideas / other ideas for next time
  • lutra
  • raisins
  • apple skins
  • proper back sweetening
  • dropping yeast nutrient - maybe yeast will stall and leave some sugar
  • bourbon oak aged imperial apple cider / apple wine
