Mäskin pH-tavoite : 5.3-5.4, pH säädettiin häränhännällä. 0,5 kg kaurasta oli delikauraa. 1h keitto, viimeisen 15 min aikana lisättiin keittohumalat. Lopetettiin keitto, heitettiin simco messiin ja pyöräytettiin vierre pyörteeksi, jolloin protskut laskeutuu pohjalle. Annettiin seistä 10-15 min. Letkulla käymisastiaan. Seuraavana aamuna hiivaus.
