Notes
Brewed 5/4/23. Used Malterie Franco-Belge pilsner. Mash in w/1.25 L city H20 (plus 0.5 ml lactic), hold 130 for 10 minutes, raise to 145 - 147 for 50 minutes, then heat to 158 for 10 minutes, then mash out at 168 F. Sparge with city H20, plus 1.5 ml lactic. Pitch dregs from 1.3 L starter. Pitched wort at 72 F. Used heating belt to get fermentation to 82 F. Brief rise to 85 F, but generally settled at 80 - 82 F. 05/19 racked to keg; gravity 1.007, attenuation 88%. Kept heater on to maintain 82 F. Removed heater on 06/03.
