Notes

I take my water to 180 and let it cool a bit, adding the honey while the water is warm enough to dissolve it.

Brewed on 7/4/22. I added blueberries in the primary and then became worried about the fruit being in too long, so I re-racked after ten days. I have racked it into the secondary on 7/23 as fermentation has slowed substantially.

OG of .997 on 8/22. Racked to another conditioning vessel. Added 2 Camden tabs and 1 tsp Potassium Sorbate on 8/23. On 8/24, added 16 oz of Blueberry Juice Concentrate from Dynamic Health Laboratories.

Goal is to bottle this in September. Sitting at about 73F to clean up.
