Starting fermenter volume was 6.5G w/addition of cooled (39F) distilled water (approx. 1.5G)
Actual O.G. was 1.106 for entire fermenter volume (6.5G)
Intense initial fermentation activity necessitated attachment of blow-off tube to Genesis 7G fermenter first 2 days
Primary fermentation effectively completed in 7 days
Very substantial trub even after first 2 days of krausen blow-off
Transferred to secondary after 11 days for clarification; spent 8 days in secondary; significant clarification achieved (Ambient T throughout primary and secondary was 65F +/- 3F)
-Yield to secondary was approx. 5.2G due to losses from blow-off and sediment
-F.G. = 1.014
-Calculated ABV = 12.1%
Bottled after secondary using 3g Lallemand CBC-1 bottle conditioning yeast, with 2t Fermax and 5.3oz. corn sugar; target = 2.7vol CO2
