Golden, malty, spiced Gruit with honey.

Herb ratios flexible, I go with whatever I find in the hedgerows.

Local water is hard so if water soft, reduce bittering herbs, if over bitter this does improve with ageing.

A couple of Star anise can be added to bottling bucket for 24 hours.
