This was after chilled wort was mixed with the 2 gallons of water in the fermentor. I expected to be adding water up to 5.75 gallons, but since at 4.8 gallons the gravity was close, I left it as is. Don't know how I was so far under.... 5.5 oz hops may have absorbed ~1/2 gallon (although many people will say pellet hops don't absorb water). |

After calibrating my hydrometer, I learned it is ~0.004 high from 1.000 to 1.030.
It is about 0.003 high from 1.030 to 1.050.
It is (presumably) 0.002 high from 1.050 to 1.060.
It is (presumably) 0.001 high from 1.060 to 1.070.
Higher than that it seems to be correct. |

+60 hours. Decided it should get dry hopped. half ounce each of Centennial, pilgrim, and some liberty too. Great bittering flavor, and I think the Columbus/Pilgrim combo actually worked. |

Dry hops added: 0.5 oz each of Liberty and Pilgrim, plus 0.375 oz Centennial leaf hops. Tastes great, and bitterness is heavily weighted toward the finish. Very smooth start |

Carboy said 4.7 gallons, but got 4.2 total. Leaf hops probably absorbed ~20-30oz, and the rest (30-40oz) was yeast. |

First taste while brewing with Pat. Good beer! Smooth, some lemon/citrus up front and "hoppy" aroma (liberty influence?). Complex, lingering bitterness that peaks on the back of the tongue. |
