Notes

Two stages of hopstand/whirlpool - first at flameout for some bitterness/isomerization (half an hour), followed by a lower temp (85C) hopstand for an additional half hour (this is in the sub-isomerization range), and is attempting to strike a balance between more rapid extraction of hop oils and the volatilization rate.

Mash done in 18L of water (strike temp 74C to hit 67C mash temp), BIAB, with 14L of sparge water (single sparge).

Hops will be bagged to try to keep some hops out of fermenter.
