After conditioning and carbing, the overall flavor of the beer is rather phenolic. Will plan to brew this beer again to work on adjusting the flavor to avoid this going forward. A few items to consider for next batch. Removal of Carafa grain and use a grain that still provides some dark color but less roast notes (I feel the grains were old and the high roast provided a poor impact to the beer). Furthermore, perform a ph reading to ensure this aligns with recipe expectations. Finally, brew a smaller batch to allow for proper head space in the fermenter. |
