Notes

A modern take on the International Pale Lager style, designed to mimic a classic Mexican Cerveza using Escarpment Labs "Krispy" (Kveik) for a clean fermentation at.

The grain bill relies on Superior Pilsen and 16% Flaked Corn to keep the body light and crisp, while Vienna and Munich malts are layered in to hit that deep golden color (SRM ~4) and provide a subtle bready backbone often missing in standard light lagers.

The hop profile is streamlined to maximize "Lime" character: Magnum provides a clean bittering foundation, while a heavy 35g Whirlpool of Motueka synergizes with a post-fermentation addition of fresh lime zest. This creates a distinct "Mojito-lime" aroma that sits on top of the beer rather than relying on acidity. Mash pH is targeted at 5.33 and water chemistry is sulfate-leaning to ensure a snap in the finish.
