Notes

Using Strata everywhere where it says Sorachi Ace

Mash @ 150 for 60 minutes

Sparge and collect 6.25 gallons

Boil for 30 minutes following the hop additions

Ferment at 68 degrees for 3 days and then gradually raise temperature to 70 degrees. Ferment at 1-2 PSI.

Dry hop on Day 14-17

Cold crash for 2-4 days approximately 3-4 days after dry hopping. 3 days is preferred.

After kegging add gelatin through gas post with syringe

Keg and carbonate to 2.5 volumes. 11 psi @ 37 degrees.
