Overall, much happier with the spice notes in this batch. They still blended well but were not as overpowering as last year's version. The honey I feel is providing too much thickness to the brew and for next year I plan to reduce the honey to 1.5 pounds, rather than the 2.5 pounds. The honey feels to be adding too much thickness to the brew where I would prefer this to be a little thinner and allow for the year to dry out the beer a little more, allowing the spices to play a contributing role without having to fight the honey as much. |

Judging notes from TRASH 34 - zero hop notes/profile (look to increase slightly to provide some hop presence for balance). aim for slightly higher carbonation (which may come from less honey). elevated level of sweetness for the style (agreed and plan is to reduce amount of honey next brew). Overall, the honey caused too much sweetness which muted the spices and left a sweet finish. Less honey for the next brew should allow for a dryer finish and more presences from the spices. |
