Notes

Mashed In at 154 and recirculated w/ pump for 30 minutes. Stopped pump and direct-fired gently for 10 minutes. Recirculated wort for additional 50 minutes before re-routing outflow to boil kettle. Wort temp at end of mash was 148

Simcolumbus is a 50/50 blend by weight of Simcoe and Columbus that averages to 15.0 AA%.

At flameout, left kettle uncovered 10 minutes, then whirlpooled and strained out as much of the hops matter as possible before chilling to hopstand temp and adding whirlpool hops. Goal was to let the 5 min hops sit longer. Split batch between two fermenters with one pack of Independence and Kveik for comparisons, Fermented at 68* ambient in house for 11 days while on vacation.

Keg'd on Day 12 with dextrose solution, a little roused yeast, and dry hops. Plan to keep the dry hops in keg for the duration. Dry hops = 1 oz in each keg.
